    If this damn wind will lay down, tonight the egg gets lit for a long slow burn and a pork butt goes on. Some of the BBQ sauce santa got me will be used tomorrow.

    lofht coat of olive oil these days with a rib made by Weber
    Dry smoking rub

    that’s it

    just let smoke and low heat so it’s thing
    Wrap in butcher paper after 4-5 hours then cook until 205-210 internal
    Let it rest an hour
    Shred and eat
