    I got caught up with the last couple hundred gallons of sap in the storage tank from yesterday. It was warm (55°), humid, raining with swirling wind today. The sugar room was a freaking sauna today. The wind was messing with the steam leaving the cupola, had to be 90° with 99% humidity in there today. Cooked from 9-3 and made about 5 gallons of syrup so it was worth the sweat today.

    The sap flow had slowed down quite a bit. First it was too warm then last weekend in the teens so too cold. The last 2 days have been ok, 50, 80, and 210 gallon respectively
    Should be another 200 tomorrow hopefully. Our syrup total is at about 40 gallons so far. Would be awesome to reach 50

    I was looking at that. It's so damn cold today. I'd say single digits and horribly windy. I don't think we'll have sap for almost a week with this cold snap and big snow storm coming. But hopefully will have a good 2 or 3 week run after that.

    Hey. I didn't get to bottle anything. My daughter got sick and I was homebound for 5 days with her. The weather just nroke again and the sap flow is back on. We're pushing 60 gallons of syrup as of today. And I'm getting in a nice sunny afternoon boil right now. I think we have about a week left. The sugar maples are starring to bud which marks the end of the season pretty much.

    She's doing better now. Back to school! She had a stomach virus that somehow I didn't catch from her, possibly working as an ER nurse has built my immunity a bit.
    I boiled 250 gallons today and was able to draw off about 6 gallons of syrup. The season is winding down but we're gonna hang in till the end. Possibly double last year's production.
    Sorry it's taking so long to get it processed for shipping but it's just so much work to keep up with the daily sap collected, cooking it whenever I can, working, and single dad of a 5 year old girl. Well her mom takes her every other weekend and I spend that weekend working 2 double shifts lol

    Ran out of firewood which was totally unexpected. We are over 60 gallons now and have another good looking week ahead. I went today and bartered a cord of dry split red oak for some syrup. Hauled it home with the tundra and trailer. Will be ordering bottles and containers Monday and hope to get started on that in the next 2 weeks.

    Cooked about 100 gallons today. Had other stuff to do so didn't get it all done. Plan to collect and cook tomorrow and get the evaporator fully drained out of any sugar. We'll flush it with water. It's getting to the end of the season. Once the buds come out on the tree's we run the risk of making some bitter tasting syrup. So we'll get all the stuff we know is good finished up tomorrow and see what we get for sap next week. Boil it and give it a taste. We are getting close to bottling time boys. Hang in there.
