Holiday Prime Rib Time!

Doing a practice run of a prime rib today. If good I will be doing 2 more for family dinners on Christmas Eve and Christmas. I followed Swine Life BBQ’s recipe this time.

Can't wait to see the finished product. I plan on doing a few smokes this week too. Beef roast, Spatchcock chickens, ribs and a ham.

 

I do mine “old school” on a 1960’s Farberware handed down from my parents. Comes out awesome

Wow.....

One of the best things I have ever eaten..... If you saw me, that would be saying a lot! This was a cheaper select cut from Sam's Club and it is very good! For Christmas I will step it up and get 2 Prime roasts.

The dipping sauce was one of the bests! I am using the leftovers for Prime Rib sandwiches on the flat top tomorrow!

I typically sous vide mine for 24 hours or so then ice bath for 10 minutes and finish under the broiler. Perfect edge to edge medium rare.

 

I like to smoke mine in a bullet smoker with charcoal and mesquite wood chunks. The smoke with a nice herby rub browns really nicely. Can’t wait!

 

I pick mine up on Wednesday...so stoked

 

It is officially go time!!!! Had to throw the Yoder on the trailer and take it to the in-laws where we are eating and opening presents. It has been pouring rain all day. Converting over to sleet than snow. Brought my canopy to keep some of the moisture off the smoker. Nothing is going to stop this holiday prime rib! Bought the prime rib from Costco yesterday. That wslas miserable, cops directing traffic and lined up on the road to try to get into Costco. Every spot full and had to park at the neighboring Walgreens.... It is a 4 bone and this time truly "Prime" grade. Looking to pull it off about 4 to 4:30.

 

I want to try that method! Love the mild smoke flavor in a prime rib though!

 

Picked up my beautiful chunk of happiness from the butcher today, he cut it a little bigger then i asked for, but i forgave him. Thank god these roasts are always on sale this time of year, one could go broke eating this good.

 

#boomfrom brasstown beef in GA you can pick the cow it comes from. Prime. The best I’ve found on the east coast

 

That’s a good price! Fred Meyer cut me one right at 6am when they opened. 5.77# sale - not bad.

A guy at work said he’s been dry aging his for a week by putting it in the back of fridge covered with cheese cloth. Might need to try that next year.

 

Prepping for tomorrow. BIL got an amazing piece of meat for $4.50 a lb this year. Cut the other half into steaks and threw the ribs on the traeger for tonight.

 

Oh wow, that is pretty cool! I will file that away for future reference!

 

Mine came out amazing! Everyone ate and asked when I am doing it again. It turned out very very good!

Just threw a 13lb rib roast on the egg. Aiming for an internal temp of 120deg.

 

They have a few locations but we go right to the ranch and buy from them. It’s awesome the quality is top notch and it supports local farms which I’m happy to do.

 

Prime rib is so delicious because of all the juicy fat throughout the meat. Damn just looking at the photos is clogging my arteries!

 

We use reverse sear method on prime rib, beef tenderloin and ribeye steaks. Just absolutely perfect results!
