    Strip steak on the coals. Yes that’s right on the coals. Only seasoning is kosher salt, that’s it

    lot the fire, slap that room temp steak on top of the coals for 3 minutes per side turning once. Don’t move it don’t touch it no matter how much it sizzles and pops. Leave it alone. Cooked mine to a internal of 125. Amazing.

    That's amazing. I prefer mine in the 140 range, but I'm guessing you could get there too without to much char.

    Not done enough for me, but I do something similar when I reverse sear.

    If I'm doing it on NG, I end with a sear right on the flavorizer bars. If I'm going it on charcoal, right on the coals. But only after a lower and slower initial cook.
