    Smoked a leg of lamb for dinner later this week and then salmon for last night's dinner. Potatoes were done in the foil pan under the lamb to catch all the drippings. We ended up having those with the salmon.
    This kamado grill is just short of unbelievable; one load of charcoal stayed at temperature for 7 hours; about 5 at 220 for the leg and then I opened it up a bit and did the salmon at about 400. It would have gone longer but I shut the vents to kill it after the fish was done.

    De-boned leg of lamb. I spiced up the inside and tied it back together.

    Hands down!!! They leave great grill marks. They conduct heat so well and run much much hotter. Have them in my Yoder and it is amazing what kind of marks you can lay down with them. They are a grilling necessity.

    100% sir. Knox covered it pretty well. Something I’m gonna do is I already bought a replacement factory grate for my Weber. I’m going to use aluminum wire to secure the GrillGrate to it so I can easily remove the whole set up. Not a fan of the 3 piece design plus my original grates are seasoned really well and I want to keep them that way for other cooks.

    I’m also experimenting with raising my coal bed up higher to get more heat without wasting a bunch of charcoal

    I mean it’s hard to beat straight Cavenders, but man these kosmos seasonings are holding their own! I was surprised at how the Texas beef came through
