They do it so when you haul or put a heavy load in back the rear will be centered when you accelerate.

Explain to me how a fixed solid axle is going to center itself when putting torque to it! It is set on leaf springs. It’s not going to center the axle putting a load in the bed or accelerating. If your axle moved side to side you are going to have one “swaying ride”. I have been a tech for over 45 years. I have measured mine and don’t find anything loose or out of wack. Other manufacturers do the same thing if you look closely at them too.
This isn’t even affecting the thrust angle when doing an alignment.

Well, one wheel with a different offset might work at first, but tire rotations would become a real PITA since that rim would have to stay in the same position...

I think I’ve seen a 1/2 spaced floating around, that would take away most of the difference instead of a single wheel with a more aggressive offset. I think one of the members here had a post about it too

I noticed that a while back on mine. Convinced myself I just wasn't looking at each side equally straight on. Drives fine.

Because I'm OCD about shit like this, my ultimate solution was to remove the 1.25" Spidertrax spacer (I installed the 1.25" spacers on all 4 corners previously) and replaced it with a 1" spacer on the rear wheel that sticks out more than the other side. It corrected the problem enough that I don't notice it anymore.
