    12.5 pound brisket will be going on for a long slow overnight cook..

    Mmmmm mmmmm already cant wait for some burnt ends and brisket sandwiches...

    This is what I get into when I have the rare weekend off, LOL

    I have a 3 lb corned beef flat in the smoker now. Soaked to de-brine, Seasoned, fridge overnight ....pastrami :)
    Will rest it overnight and steam it to 202° tomorrow for serving. Can't wait.

    OK brisket is prepped and ready for tonight. So this time I separated the flat and point and trimmed out all of the deckle. This was the flat will have a uniform bark, vs separating the flat from the point after it has cooked, and I can keep the flat intact and moist while I cube the point, pour bbq sauce all over it and place it back on the smoker for another hour while the flat rests.

    Here are the two pieces separated and seasoned up...

    I explained why in the post above yours, I am using a weber smoky mountain, so kingsford blue bag charcoal with apple wood chunks.

    A packer brisket is two separate muscles joined by a layer of thick hard fat called the deckle. Burnt ends come from the point, slices from the flat. Seperating the two makes it easier to prepare after everything is cooked.

    Sorry for the thread jack. We need a smoker thread...Maybe I'll start one. Anyway here's my home made "Katz" style pastrami. It'll rest and cool overnight and get steamed tomorrow for service. This is cheap and easy for anyone starting off smoking. Time consuming for sure because of all the down time but we'll worth it. This cost me $3.59 ( I already had the spices to make the rub)

    2:44am and we have hit 160 and 163 repectivly, THE STALL, went ahead and wrapped, even tho I said I was not, fed the fire more fuel, temps holding at 210, a little lower than I normally smoke at. But they are looking great

    Well here it is, done. I cubed the point for burnt ends, then covered in bbq sauce and back on the heat for an hour, made a sandwich and damn it was good.
    I sliced a few slices off the flat, they bend and tear easily, not to bad.

    I am single and like to eat. Problem was all of the bbq places around here kind of suck IMO, so I taught myself how to make great bbq, subject to opinions I know....LOL

    Bet it's better than what you pay for out there. I hate spending money and the food you get is less than mediocre, therefore, I always cook at home too. BUT, that there is something else. Nice!:thumbsup:
