    Today on the egg.

    It’s been done before I know. But it’s good and brings happiness to this world. I give you the pork butt.

    Simple rub. No musterd but olive oil.

    Its been wrapped and back on the egg, Its my first pork butt cook with butcher paper, looking forward to see if there is a difference between the paper and foil.

    You will end up with a better bark on it and should still be full of juice in the paper..that's how my brisskets are..never done a butt in the paper yet

    Could you tell a difference using the butcher paper?

    A little, It was still as moist and tender as before, but I noticed a lot more smoke flavor than usual, that could be due to the paper breathing so to speak. Cook time was about the same.

    Looks great. Pork shoulder has become one of my favorites to smoke. Salt and pepper as my new favorite rub on brisket and pork.
