My neighbor gave me a moose steak. It looks like its about a 6" sphere. Anyone have any suggestions on how to cook this thing? A simple marinade? I would like to do it on the BBQ.

    Thanks for any suggestions!

I use to marinade venison steaks in Teriaki for an hour or 2 and quick cook on grill. Just like venison don't over cook. If you marinade longer it will get too tender. Nowadays I make smothered, chicken fry, or stir fry venison.

It really depends on your thoughts and feelings on wild game meat. If you have never had it, you may be in for a surprise, if you have had it and are just looking for other cooking techniques then that changes things.
If you have never had it...my suggestion is to soak it in buttermilk for at least an hour, pat it dry, add some salt and pepper, and cook it as rare as you can handle it. Put a good sear on it, there is no fat content so overcooking it will make it extremely dry.

    Function before sparkle.
    Marinade:

1 bottle beer - not a light lager, more like a red ale.
1/4 cup soy sauce - normal stuff, not the super dark.
    1 tablespoon Worcestershire
    2 tablespoons mustard (dijon)

Ziplock bag that in the fridge for two days. Then grill it but don't overcook.

Thanks for all the tips! Sounds like the main thing is to not over cook it. From what I have read, I should cook it as I would cook a steak.

Trying this one out!!! Its in the bag marinating until Friday. Turns out I had a few steaks in there, not a big chunk so I will get to experiment a bit. 3 little ones on there tonight. Gonna give them a quick sear on each side and then a couple more min. Looking forward to this..... Its my first time!

Enjoy your slice of Bullwinkle. It should be tasty! At least as long as the meat was dealt with correctly in the early stages.

Lots of ways to cook it, but key thing with wild game is to not over cook it like others have said. Med rare is best for texture and taste.

Exactly. Unless it’s bear, you need to cook that well. Though I learned last week not to stray from the low’n’slow cooking methods for any cuts. Bear chops are tasty, but my boot is less chewy. ;)

Pretty sure that's the case for most carnivore and junk eating animals like pork. Gotta stay away from trichinosis in those animals.
