    Pork skewers for dinner.
    I cut some thick pork loin chops into 2-inch squares. covered in in mustard, honey, salt & pepper, and then some corn starch to seal it.
    marinaded mushrooms and onion in worchestershire sauce, olive oil, bbq sauce, salt & pepper. Skewer and grill.

    I would double check your temps. It may say 225, but to get a brisket to 160 that quick it would have to be well north of 225.

    Yeah, my little traeger fluctuates the temp and has a harder time with the 180 and 225 temp settings. It was up to 275, so i dropped it to the 180 setting

    Id suggest moving temp probe to the middle of the flat. From where it looks like you have it, you might be getting a temp reading in the fat from point to flat transition.

    We have been having a lot of meat over smoke and/or lump lately, so I'm going to grill these Costco birds, so we don't overdue the smoked meats this early in in the season.

    I usually spatchcock and then break it down even further for ease of flipping etc. Necks and extra skin will get frozen for soup use.

    Not sure why I enjoy this so much, but I love breaking down a whole bird. I guess because it's so easy and cheaper than buying the parts individually. I've even seem Spatchcock birds at the supermarket now. It takes about 30 seconds to do if that's all you wanted.
