Dark brown sugar, chopped pecans, black pepper, and cayenne pepper is optional but a must for me. Mix it together good put a layer on a pan and press one side of the bacon in it, then place on pan with a rack. Cook in oven at 350 until your desired texture. Chewie or crunchy.

So I have to be honest...this was my first time making this. I now have to make more. I started an epidemic with all my family and friends.

I am making this tonight, can you be more specific as far as the brown sugar/cayenne pepper ratio?

Well us chefs never measure things, but lots of sugar and enough pecans to satisfy. Maybe 10-1. Just a good amount of pepper, and depends on your taste buds for cayenne. I put a good amount, maybe a table spoon, and basically you dont want alot of heat. Just enough to almost taste it.

I use maple syrup. Add my pepper to it in a bowl and stir it up well. I prefer using syrup as it gives the bacon an even coating as opposed to the brown suger.

Word of caution to those that wanna do this. Do not preheat the oven because the bacon will most likely curl. Turn it on once bacon is in. I do mine at 400. Also if using brown sugar don’t leave bacon in paper towel because it’ll stick to your candy and it’s a pain in the butt to remove. Also a layer of aluminum foil makes cleaning the cookie sheet a lot easier.

I do pretty much this same recipe on the smoker. Never lasts through a morning with the family. Good stuff.
