    All done, was pretty good but not great. Poultry on a grill stumps me. I just cant seem to get it right. In a oven its like turkey easy but on a grill I struggle with it. Anyway here was the finished product...

    I’ve never been able to spotchcock any bird....always ends up dry on me....there is zero way to screw up beercan. I love my smoker...smoking turkeys is my nemesis

    Spatchcock style cooks pretty quick. It's fairly easy to overcook it. I over cooked it my first try. The crispy skin with moist meat is great.

    The best whole chicken ever grilled for us was wrapped in foil (no brine or prep) and pushed to the back of a large pit. We actually forgot about it. The juiciest whole chicken I ever had. I have never attempted again. We gas grill breast and thighs with good results regularly on my Genesis.
