    Looks good. In my limited experience, the time in the foil seems to impact the "fall off the bone" factor the most. The first I did 3-2-1 exactly that way, the racks broke apart when I tried to pick them up. I reduced to 1 hour in the foil and it was good. I usually judge by feel when I take them out of the foil for how long to make the last hour. The competition people say there has to be some tooth but I'm not a fan of chewing on bones, so I'd rather have the meat come off cleanly.

    Got some center cut loin chops for tonight. Brined and rubbed I a gift from my Secret Santa. Gonna smoke and reverse sear with a light brush of Carolina Shine.

    Go 90 minutes in the wrapped stage and should be perfect. I do 90 minutes and ribs do not fall apart, but they are very tender and come off the bone no problem. It has that perfect snap that you want in a run.

    Oh yeah, it is going down tonight! Some brisket and smoked Mac n cheese.

    started with a layer of salt, pepper, garlic. Then put on a layer of hot BBQ rub, then finished with the Montreal seasoning to give it some crunch!

    I ordered some Waygu beef ribs the other day off of Woot. Should be here in Feb. Cant wait to smoke those up. Did a 17# Waygu brisket last year and it was amazing.

    Can't wait..... I actually like to eat my brisket with some slices of cold sweet onion and bread and butter pickles. It is really good. I have a buddy that competes in BBQ and the steak competition and he tells me that is the classic old school southern way to eat brisket. It is pretty darn good actually!!!

    Mississippi pot roast today. Not sure if considered “smoking” for purposes of this thread, but did smoke the chuck for 1.5 hours.

    Roast could be done in the oven, smoker or crockpot. Decided not to use the smoker cause I don’t like the idea of burning pellets on meats that are covered; it won’t get any smoke flavor so why waste pellets. That’s just me. So crockpot it is.

    Will cook in low for about 8 hours until the meat falls apart. Will post picks when done.
