    Looks great!

I am stuck on 100% pure maple syrup, can't do anything else, just not the same. We actually got some as a Xmas gift haha.

Crazy how expensive it is. My uncle used to make it, as a kid I would help out, pretty neat.

I make maple syrup. My brother and I produce about 30 gallons per year. We have about 125 taps and use a 2'×8' wood fired evaporator. We have done it since we were about 10 years old. With a several breaks in there for college and life and whatnot. It's a fun hobby but a lot of work and time. We sell enough to fund the years operation and put very few dollars in our pockets.

Thats cool. As a kid I only remember the fun parts. The other day I asked my uncle if we could do it sometime with the the next generation, first thing he said is how much time & work it takes.

It's a lot of work. Just setting up, taping trees, and cleaning up after the season is enough, gathering and splitting 5 cords of wood during the summer. Collecting 1-2 gallons of sap from 100+ taps every day by carrying 5 gallon pails through the woods is tough too. Dump 10 gallons at a time into the 300 gallon tank in the tundra bed, then back for more. The actual cooking part is fun (beer time) but then it all has to be filtered and bottled, then sold (buy more beer). We have about $15k worth of equipment to make it all a bit easier.

I remember the cooking part was usually done at night, probably because we worked the whole day. I'm sure my uncle and his dad were put in more behind the scenes work that we didn't see as kids.

If anybody is in the Phoenix area. I'd HIGHLY recommend a place called Sunnyside Cafe in Mesa. You won't be disappointed.
