    Leftovers are the Bomb, fried rice is one. I always make extra rice the night before for dinner, just for this. I use Jasmine myself. Now speaking of Rice, have you ever made Arborio Rice? You start out by frying it in some olive oil, constantly stirring until it turns brown, I like toasty brown. Now add water just till it covers the rice, or chicken stock. Cook and watch closely, stir when necessary, and you will have to add more water or stock. Just do this until it has the right bite and consistency, and it will cook more just sitting there with no heat covered in the pan. It has like a roasted almond flavor.

    Chop up a few stalks of green onion and fry in the oil before putting everything in, then chop up some garlic and throw it in towards the end. Island style!
