    A great cold North Carolina morning to work up a batch of pecan smoked venison jerky...
    My favorite recipe to date....it turned out perfect.

    Let the jerky mix marinate all night.

    Interesting. I've made a lot of jerky but never with a gun. Always sliced it into strips. Looks tasty.

    Thanks for the kind words from all. Much appreciated. On such a small scale making great tasting jerky is fairly labor intensive, so unfortunately I don’t sell it.
    It’s a time bandit...but worth the effort. It does not last long around our home.

    I use a Traeger pellet smoker/grill I have had for several years. It allows me to use a variety of different wood pellets to achieve the smoked flavor in chicken, beef, wild game etc.

    I try and keep on hand a variety of hickory, apple, cherry, maple, pecan, mesquite pellets. It just depends what is going in the smoker.

    I like that jerky rack. Care to share where to get one? I’ve always used a dehydrator but this year I plan to use my pellet grill!

    No not forsale, it’s cheaper to make your own. It’s not a cheap hobby and takes a lot of time. And does not last long enough to sell lol.

    68 degrees on a beautiful Christmas Eve....4 hour rolling pecan smoked a sliced up eye of the round roast after a 14 hr marinade...incredible!

    6# eye of the round yields about 3# of delicious jerky. A lot of work.

    I got 3# of jerky from a 6# eye of the round roast sliced with the grain. Vacuum sealed and into the freezer.
