    The egg is set up and ready to lite sometime tonight probably around 2am

    Pork butts been slathered and rubbed and awaiting the venue of smoke to waft over and around it, to slowly transform itself from the raw hunk of slab of pork goodness to the smoky pulled greatness of bbq

    And it is time to wrap. It’s actually done but I am going to let it go wrapped for a couple more hours just for the heck of it. I want this butt to fall to pieces. Also here’s a pic of the vent settings I use for this cook.

    I love my BGE. A couple of years ago I purchased a DigiQ BBQ temperature controller. It totally changed my approach to long smokes. In short, it measures the controls the internal temp of the egg by 'puffing' air into the firebox to keep the temperature consistent. It also measures the temperature of the meat. Another feature is it will allow the temp to drop down as your meat approaches 'done'. For example, if you are smoking at 250, and when your meat approaches your 'done' temperature (you select the temperature), the fire will stop dropping off and goes down to 180 (Safe holding temp for meat).

    Using a separate temperature graphing device I never see more than a 3 degree variance in temperatures throughout a 12/14 hour cook (except when I open the lid to check the meat).
    Highly recommend the DigiQ if you like to NOT getup in the middle of the night and check on your cook/fire.

    part of the enjoyment of me smoking on the egg or Weber or whatever is getting to know how it runs and where to set my vents for what I am smoking or grilling. I prefer the hands on approach.

    Glad you enjoy the device you have and no doubt it can drill temps down.

    I'm with you on learning how the pit runs and the joy of not need devices (or electricity) to cook. The DigiQ is just an option!
    Question: Are you ever adding dried wood (Oak, Mesquite, ect) during your cooks?

    I use royal oak, then add apple or cherry chunks, next brisket I cook I am going to go with hickory or oak.

    If you can find it, try some orange wood lump charcoal. That's what I'm working thru a bag of and I'm really liking it.

    I tried peach wood once, was very bitter, which really surprised me.

    Completely agree. I don't like to rely on too many auto things, or you don't know what to do it without them.

    I also prefer hands on, but I do use a Thermapen for final temp and sometimes to confirm temp of smoker. I've gone to analog TelTru thermometers on my horizontal, so I don't even need to worry about batteries being dead when I want to smoke something.

    Butts look! I wish that was my lunch. Throw it on some fresh Kaiser's with creamy coleslaw and a side pickle and call it a day

    I just sat your post on Royal Oak Lump, that's my go-to as well. It's cheap up here and readily available. I did pick up a few bags of KamadoJoe large chunk or something like that, when it was on a good sale. I'll use that up next year

    Get some claws! Makes it go a lot faster.
    I did two butts this last week for 250+ person lot luck, only took me a few min to shred them.
