    My wife thinks serrated knives are a good thing, glad I stocked up on some food service knives before getting out of the restaurant business.

    I am a German knife guy as I cut more rocking than I do with and kind of precision.
    Don't get me wrong, I like a thin sliced tomato but I am not going to make it look like a flower before I eat it.

    That and I take care of my blades but i need something machine honed so I don't feel bad when I do it by hand.
    I can't get a Japanese blade back to box sharp to save my ass.

    Sharpening is a tough task. My Dad owned the restaurant I grew up in. He was cutting a steak off a loin one night with the costumer standing there (he was showing off). He was having a hard time with the knife so he asked me for another, I took the one he had, hit it on the steel a couple of times and handed back to him. I got one of the few unsolicited complements from him that night...he said "That can't be the same knife". :rofl:

    Get an Arkansas Stone and watch some videos how to sharpen. I'm not a fan of machine sharpening, I just as soon do it by hand.

    I tried by hand for years. Finally got a Chef’sChoice 15 Trizor XV EdgeSelect Professional Electric Knife Sharpener. Probably not as good as the guys who sharpen by hand, but quick and easy.

    A steel I can use to keep them up but two things I never mastered was a stone and changing brakes.
    I can do both but struggle every time.
    I can be taught by masters of either and still struggle.

    Ask me to set up a network over VPN with 50 different sites and a secure vlan on each with Dixie cups and string and I could probably do it.

    Currently battling Application support blaming network for their slow ass app when we have ping times in double digits gong from US to Uk...yeah..network...whatever.

    BTW a steel just hones an edge, gotta put it on a stone to sharpen.

    I have a set as someone told me that they are just as good but they are a little lite for me to handle.
    It is my main knife when just making a quick dinner but they dont last that long when preparing a HUGE dinner and have to do a lot of cutting
