    2hours and 35 minutes meat temp at 172°. Need to figure that out, I was expecting 3 to 4 hours. Last 10 minutes at 450° to crisp the skin.

    Jose is the man to talk to about the turkey. @COMiamiFan

    For the chicken, split the breast.
    For the smoker heat it to 300° then drop it to 250°.
    Season your chicken with the rub you want about an hour before you cook it. I used garlic powder, black and white pepper some Tony Chacheres and paprika.
    If I remember I had a 4 or 5 lb. Bird and it cooked for 2.5 hours at 250°. Then I turned up the heat to 450° for about 10 minutes to get the skin crispy.
    You wont be disappointed. This has been my best yard bird yet.

    Well, to be fair, my queen just sat down to sample these ribs and stated they were very juicy....and had a kick to them. The rub probably did it in for my kids.
