    dear god these are amazing. St. Louis cut, smoked 4 hours at 250 over royal oak and seasoned apple wood. Rub was Weber’s original dry smoking rub. Sauce is Stubbs original cut with water to thin it out for the last 20 minutes of the cook. Enjoy

    Do they help with the cooking, temperature, cooking evenly?

    Not that I noticed but it does help you get more racks on per cook vs laying them flat on the grates. I cut these in half so everything would fit better for the cook, layed them flat to sauce them for the last 20 minutes.
