    Still rolling stock baby....
    Yup over cooked it. Temp hit 210

    The down sides

    1- over cooked
    2- thicker than usual bark, well not really a downside until #3
    3-don’t have the proper slicing knife. My chefs knife and the thinker bark did not like each other so there was only one thing to do, turn it into chop.

    Still made a damn good sandwich.

    Looks like you salvaged it alright.

    I recently got one of those electric turkey carvers as a hand me down from my mom, thing works great and slices through everything with ease. Before that I bought a really expensive Global knife and it slices really nice, but after a while my hand hurts. The electric one is so easy slicing.

    Yep, the bark definitely throws the whole slicing thing for a loop! Thick bark and tender meat just seem to fall apart. But it all taste good in the end!

    I did the same a few weeks ago. Took the burnt ends, sliced them, and added them to a vegetable soup my wife made. Took a boring soup and made it great.

    That sandwich looks pretty legit too!

    Thank you everyone. I admit I was a little bummed out by the mistake, I take mistakes personal, sometimes a little too much, and my expectations are always set high...
