Not smoked yet but got some pork belly I'm making into bacon. Will smoke in about a week with some apple and hickory. 10lbs for about 25 bucks and a bit of time. :bananadance:

How long do you need to brine/cure it before smoking?

@Grumpy Uncle I cure it anywhere from 5-7 days depending on how impatient I get. I use Prague powder so we dont die of botulism!

For sure. Cheapest place I have out here for the bellies is Sam's club or costco. Might have to skin it yourself but then just make some cracklins

Thanks Ali. I pulled it off at 160°, we like it medium rare. Let it smoke for a little over 6 hours.

Anything is possible. My luck I'll be in the desert.

The wife did pick up some pork belly that I was going to turn into bacon. I might turn into cracklins after seeing that kettle.

Controller unit. Camp chef sending a new one so I can replace it. It was not managing the temp and it would flicker and shut off.

Ha! You aren't kidding. Just went into my Traeger store to grab an extra bag of pellets for "Just in case" I run out during our cook on Monday. They just got a SRF cooler with a bunch of Wagyu like two weeks ago. I was talking to the owners wife about how I tried some from New Seasons and it was a bit to gamey for my taste. I then tried some Prime New York strips from Costco and they were like 25'ish bucks a pound. She was telling me that they brought in Black Level and it doesn't have any of the gamey taste of some of the lower level meats. I checked prices before I left and they had some fillet's in there for like 30 something a piece. Then I saw the Tri tip's and one was 200 something dollars.:eek2: I think I will wait for their next demo day before I buy any of that for some special occasion.

Hope you get your smoker fixed! I thought mine was broken too. Lets pretend I checked the plug before calling Traeger .

Cheddar wrapped in 1.5 pounds of ground chuck wrapped in a bacon weave. Going to smoke on pecan for a few hours.

Never done one of these before. Will report back.

225 until 150. Delicious right off the smoker. I'll upload a photo after I slap it on the stove to cook for am breakfast.
