    It's been a month, time for a new recipe. I'm making this today. The first time I used freshwater trout that I caught. This time with store bought tilapia. We play with the ratios some, tasting each time we add something until it's good.

    Ingredients
    • 2 cups flaked smoked whitefish
    • 2 tablespoons mayonnaise
    • 4 tablespoons sour cream
    • 1 pinch Old Bay (tm) Seasoning
    • 4 drops hot pepper sauce, or to taste
    • 3 drops Worcestershire sauce, or to taste
    • 3 drops liquid smoke flavoring (optional)
    • cracked black pepper to taste
    Directions
    1. Place whitefish, mayonnaise, and sour cream in the bowl of a food processor. Season with Old Bay (Tm) seasoning, hot pepper sauce, Worcestershire sauce, liquid smoke, and cracked black pepper. Blend all ingredients until consistency reaches a spread.

    Went to my local butcher and pointed out a few Tuna steakS. I asked to wrap them up and toss them over the counter to me. He said why toss them? I said so I can tell my friends I caught em..:rofl::rofl:Bada boom!

    Lemon pepper, garlic crusted, pan fried tuna...oh man was it dam good!

    One of my favorite fish dishes.

    I think my favorite is grilled swordfish steak, just salt and pepper with some lemon. Actually that's what I made myself for fathers day this year with some dirty rice and salad swimming on blue cheese dressing.

    Cooked perfectly rare pink center, gently flipped 2 minutes on each side med flame.
    And BOOM! I ate like a Yellowstone wolf..:rofl:

    Baja fish tacos. It's on once upon a chef. Website one of our favorites for fresh walleye or panfish.

    And yes fish is very expensive in CO. We took a bunch of Canadian walleye out to a friend in Colorado Springs. Drank for free that weekend in appreciation.

    We mainly cook redfish, speckled trout and red snapper. My favorite way to prepare all 3 is to blacken them. Paul Prudhomme blackening seasoning, butter and a smoking hot cast iron skillet. We have a commercial vent hood, if you don't, best to prepare outside. There will be smoke! LOL

    Yep, chef Paul's is the best, and so much easier than making your own. In addition, flames as well as smoke, if you dump a spoon of butter after you flip them, awesome way to cook. Smoke, fire and really good fish.

    Whole striper gutted, heavy duty foil. S&P, Ginger, garlic, spicy sesame oil, lemon grass and whole can of coconut milk..place on indirect heat about 15 mints or till eyeballs turn white or if u chopped off the head, use fork and check for tenderness..(optional tomatoes and onions)

    Cooking any fresh fish in any other fashion other than frying, around these parts, is considered sacrilegious. Some are known to smoke a rainbow trout every now and then but that’s it.

    This^^^ but when I was in the Philippines I'd start a grill up using local charcoal. I'd take a large Bangus, "Milk Fish", stuff it fresh sliced leeks, tomatoes, and fresh unsalted butter. I'd wrap it up in fresh banana leafs, and toss it on the grill. So freaking good.

    This is a marinade I use for tuna, swordfish, shark, or mahi.

    1/4 cup orange juice
    1/4 cup soy sauce
    Couple table spoons of olive oil
    4 or 5 minced cloves of garlic
    Teaspoon of dried Oregano
    Good amount of chopped fresh parsley
    Juice of 1 lemon
    Course ground black pepper.

    Put the fish and marinade in a ziploc in the fridge for at least an hour then grill.

    When I was in AK. Salmon was the go to fish naturally. Mostly smoked. Nothing better than fresh caught salmon, that you caught yourself a few hours earlier, then smoked and made into a decadent dip. "Reds", aka sockeye's, were grilled straight up. No booze or beer marinade. Heresy. Kills the fresh flavor. Less is more. Some salt and pepper and maybe a lite butter glaze. That's it. That goes quite well with fresh caught Halibut cut into 2 or 3 inch squares, wrapped with bacon and marinated with habanero/raspberry sauce and fresh picked wild AK berries. Broiled. To die for. Great with local made mead from Alaska Meadery. Formerly Celestial Meads. I knew the owner, Mike Kiker.. Apparently no longer in Anchorage. Talkeetna now it seems. My room mate would invite her girl friends over on Friday nights. They'd sit around and have some of that great salmon dip and mead. I'd always get invited but after awhile they'd get damn silly talking after drinking 19% mead so I'd retire downstairs and watch Alaska Gold Rush reruns.....with smoked salmon dip of course......https://alaskameadery.com/

    Three ingredients. Fish, butter, chef Paul's blackened seasoning. Heat a cast iron skillet to the temperature of the sun. Dip the fish in melted butter, sprinkle liberally with the seasoning. Cook for 1.5 to 2 minutes on each side. Pour some melted butter on them when you turn them over. Stand back, there might be flames. I prefer 1/2 to 3/4 inch steaks. This is wahoo. Do not did this indoors.
