    Done this and have to agree. Not much better. Someone mentioned cod cheeks and haven’t had those nut have had halibut cheeks.

    When I was growing up, mom would throw a beef heart in the pressure cooker occasionally. It had a very mild flavor, and a texture all its' own. Local butchers look at me like I'm crazy when I ask if they have heart available.

    What is your favorite way to cook said meat? To me, nothing beats a good steak cooked over charcoal

    I've smoked a couple Waygu briskets. They taste great, but not enough more than Prime to make up for the price difference. The big difference is they are more forgiving, easier to cook hot and fast, and are usually done around 193-195 instead of 200-203.

    Bacon wrapped Tenderloin stuffed with ricotta cheese. Venison tenderloin works well too.
