    I have both shun and cutco..I scored the cutco from thrift shop, the whole set for $28.00!..and had some replaced for free..

    If you're looking for something economical, check out the commercial chef knives from Sam's club. They're less than $15 and they're really durable.

    Another thing to consider is keeping the knife sharp. You can take it and have it done professionally and get excellent results, or learn to do it your self. If you do it yourself invest in some decent quality bench stones.

    A tangent on the stones, if you get a whet stone, often they come with oil to use to lubricate the stone. My personal preference is to skip the oil and use water and a small amount of dish soap. It helps float some of the metal out of the stone so the pores don't get clogged. If you use oil, it will work well for a while but can eventually clog the stone. My $.02

    I have the sharpening part covered. I even sharpen my hand saws, chain saws, lawnmower blades and axes.

    I'm in the middle of a clean up and clean out. Purge purge purge. I'm at the end of my rope of people (inlaws) saying can you put this in your garage... Guess what? All that crap you wanted stored is now going to the dump! I'm tired of my shop being the deposit of all that is junk!

    I keep Henkel Zwilling pros. 1 8 inch chefs knife and a 4 inch utility. They will get you around 80% of what you need in the kitchen. Don’t buy the “block” set. You will end up with a couple hundred worth of crap you don’t need.

    This may be the best bit of advice ever. This goes the same logic as pot and pan sets. I bought a set of both once I got out on my own and I use only certain pans and don't use the knife kit anymore.

    yes, CUTCO KNIVES out of Olean, NY 100% guaranteed no matter who owns them. when the are worn they wil replace them, or sharpen them. one hell of a sharp knife,
