one of my brothers is stopping in tomorrow, begged for bbq so I am smoking off a brisket on the egg tonight.
Salt and pepper rub, olive oil instead of mustard this time around

Going to be awesome. He’s bringing the beer lol

@RLHOK have you ever used an electric smoker? My Dad had one, he passed away few years ago so I gained a lot of his things, and one was an Old Smoky electric smoker, never used

@ARamirez73 I have an electric smoker and love it. I added an amazen smoker tray that I add saw dust too and can smoke for 8 hours totally hands off. Its lazy I know, but gets the job done. Mine will only get to around 270° max but that's okay with me. I like the fact there is almost no learning curve and no babysitting. Its like a smokey outdoor crock pot

Olive oil is an interesting approach. Any taste difference vs mustard? I’m a big brisket and pulled pork fan myself.

I wish I could get into smoking. I know it can be as involved as you want it to be.

Few more pics thru the night.
The egg is still chugging along at 250 for a good 12 hours now.
Last pic was when I pulled it to wrap at 3:30am. Keeping warm now....

Yup, I have found with the weber kettle and the BGE its pretty much set it and forget it, other than wrapping the meat I don't touch it

I use from time to time my old aluminum Little Chief electric smoker. They can be fun to use.

I used your advice to go with mustard last summer when I did a butt on my Weber. Let's just say ...great advice!

Funny thing about that, on a pork butt, mustard does make a difference, on a brisket none that I have noticed, probably just me.

Looks great man. I tried smoking for the1st time today. Did oil on the brisket and mustard on ribs. Brisket came out a little dry but meat coming off the ribs.

Respect to the people that do this all the time.

Tell me about. I used wood and kept messing with it for 8 hours trying to keep a consistent temperature.
