    I know there's a gajillion recipes online; but since we're family, thought i'd ask if you wouldn't mind throwing up some of your homemade chili recipes, bbq sauces or salsa. Fire away!

    Not homemade chili but this is really good:

    Ballows chili mix
    1lb sausage, 1lb beef, 1lb elk/deer or beef
    One yellow onion
    2-3 jalepenos
    Ground red pepper

    If you make it without the last three things, I think it's too sweet. Adjust quantities to taste.

    Pretty much how I do it, except I use whole peeled tomatoes in the can and dont add cayenne or black pepper. Sometimes I use serrano peppers if I want it hotter.

    3 lbs of roma tomatoes
    1 large onion, quartered
    A few fresh chilis, depending on the heat you want
    An ear of fresh corn if you want corn
    Lots of fresh cilantro
    A little crushed garlic (I’d do 1/4 tsp for the entire batch because I don’t love it in salsa).
    Salt and pepper to taste
    Squeeze of fresh lime juice

    Roast the tomatoes, onion, chilis and corn over a flame. Gas grill works great. Roast until the tomatoes and chilis are blistering and blackening. Let it cool for 15 minutes, then cut the kernels off the corn cob and dump everything into a food processor and pulse together.

    The flame roasting makes all the difference.

    If you want it less watery, cut the tomatoes in half and squeeze the juice out a bit into the sink before tossing them into the processor. Romas will have less juice to start with anyway.

    I dont really have a recipe. I generally start throwing it together until it tastes good to me then i stop adding stuff.

    For the most part its
    2 pounds venison
    1 pound of the fattiest ground beef you have an find, cause venison is so lean you need some fat.
    I brown all the meat together in a skillet before putting in crockpot.
    I use pre made chilli kit, for the seasoning, along with tomato paste, tomato sauce, about 3 to 4 cups of beer, a little whiskey, some brown sugar, and little cayenne.
    Then i let it all come together in the crockpot.
    Needless to say, everyone loves it and there is usually none left at the end of the day.

    I follow the @Larmand school of chili-making as well by just throwing things in until I'm happy.
    I did however try a new seasoning kit made by Caroll Shelby on the last batch I made that was pretty damned good.

    99C95154-ECE1-45F5-879C-6AC5793E0985.jpg Had the smoker going so I tried it a little differently today. Smoked the veg for about 90 minutes with my ribs, then under the broiler for a little char. Fingers crossed it makes good salsa.

    Salsa
    4 or 5 Roma tomatoes
    1/2 bunch of cilantro
    1/2 onion
    2 jalapeños
    2 habaneros
    2 poblanos
    Juice of 1 lime
    Season with Kosher salt, fresh black pepper
    Blend till desired consistency.

    I think that’s it. Been about a year since I have made it but it’s about time for some.

    Edit: forgot garlic. Few cloves of garlic like 2-3.

    This will get spicier over a couple days as the flavors marry. Maybe blend the chili’s first to help break them down before adding the tomatoes.
