Top of the line quality you would expect in a new shape to expand your cooking possibilites
We have owned a couple of Le Creucet pieces and have always been very happy with the quality of their products. This new Chef's dutch oven is a new shape (to me at least) that allows for a different style of cooking that you wouldn't use the conventional dutch oven for.First, I would say that if I was to spend the money and buy ONE Le Creucet enameled pot, this wouldn't be the one. Only because the Le Creucet really excels at, and made their name with, the conventional Dutch oven. With the flatter bottoms, you to have more real estate to brown and sear before you add your liquids in to braise. The flat area on the conventional oval dutch oven is a about a 11" oval, where this pot only has a little more than 6" circle of flat area that you can use to brown and sear. So the conventional dutch oven, either round or elongated, would be my first choice as it is a staple in the kitchen and is very versatile. If you already have one of those, as I do, this is al great second piece to add to your kitchen tools kit.With the rounded bottom and the large capacity this really can do other things that doesn't work as well in the conventional dutch oven. Two things that comes to mind are soups and things like risotto. This is because that rounded bottom really allows you to mix and stir very easily with a whisk or spoon get all of the fond on the bottom and not end up with the caked on burnt stuff in the corners. This is like using a really big saucier. The beast part is that when you are done, you can take this pot to the table and it looks great. The small flat bottom also allows you to use a smaller burner to keep the soups or risotto cooking on a low heat.If you aren't familiar with Le Creucet products, I can tell you from experience that not all enameled cast iron is the same. They can all look similar, but I have found that Le Creucet is able to make their cast iron a little thinner than you would find in other cast iron cookware producers. This makes it so that the entire pot is about a 1 to 1.5 lbs. lighter than the competitor. For a cast iron pot that will already weigh 5-7 lbs empty, this pound or so you are saving makes the entire vessel once its full much more manageable. With it being thinner, you would think that you would loose some heat retention and distribution properties but I haven't found this to be the case, or at least in any noticeable way. I still find that the pots transmit an even heat and the still retains the heat well. For these reasons, I personally feel that Le Creucet products are worth the premium they command in price. They are a luxury, but if you are a gourmet that spends lots of time in the kitchen, you will appreciates the refinements that you get from this world class cookware.
