    Holy crap what a day. It was quite a battle out there luckily we had 3 people to collect sap today. It was 45 and pouring rain all day. I've been out of the house since 10ish and just got home at 7.

    We collected 350 or so gallons of sap today from 150 taps, through the mud and rain. Started cooking it a few hours ago and have boiled off a out 100 gallons this 350 should yield about 7 gallons of syrup. That's a pretty good day for us. I had to get my daughter home but my brother is still cooking.

    Out of the rain and into the sugar sauna ...

    This is my 6 year old daughter. She was a trooper today. She was out with me the whole time and spent some time in the sugar house as well.

    The evaporator is really working nice today. Hard to explain, but the sap is flowing into the front pan on the right side in the picture. As it cooks it gets pushed along through little cut outs in the dividers you see, flowing from right to left. You can see the color change in each section. Left side is almost syrup. In fact my brother just called me and said he's pulled off about 4 gallons of syrup since I left a few hours ago.
    The way it works is cool sap enters the pan and that pushes the hot sap along. It snakes it's way through the pan dividers/cut outs. As it boils it steams off water, slowly concentrating the sap. The higher the sugar %, the hotter it gets as it moves along. At about 220° it's syrup and we test the viscosity with a hydrometer, if it's right, we open the valve and test every 30 seconds until the viscosity drops off then close the valve and keep cooking.

    It takes about 40 to 50 gallons of sap (which is crystal clear when it comes out of the tree, about 2-3% sugar) to make a gallon of syrup which is, I think about 66% sugar.
    This evaporator can steam off 30 maybe 40 gallons per hour under optimal condition. 3 or 4 logs of wood is loaded every 5-10 minutes, I try to load it every 5 minutes, and only open one door at a time to keep the heat up.

    It got cold here yesterday afternoon. I went to check the buckets this morning and tbey all had a few inches of frozen sap. Tomorrow looks warm so it should melt and the sap flow will be back on. The reat of the week looks good too.
    Gonna go try to take care of a few issues at the sugar house and maybe get a pump with more gallons per minute rating. It's slow pumping 200 gallons from the truck tank to the holding tank with a 5 gpm pump.

    Only got about 100 gallons of sap today but there was probably 200 gallons of ice left in the buckets. that should melt off tomorrow as well as additional sap.

    Struggling today. Every bucket I've emptied is this full or overflowing. They range from 3-4 gallons each. So I can dump 2or 3 into my 5 gallon pails and have to walk back to the truck. I'm about 350 gallons into this day.

    It's amazing how clear the sap is. You can see the bottom of the bucket in this picture. Pure as can be.

    Mostly water here, only about 2% sugar. Lots to boil down to get to syrup

    maybe it's just me but i always wonder how things like maple syrup were discovered. Like... did some dude try boiling the sap from all trees and decide that maple was the one that would go best with pancakes?

    Pumping from the 210 gallon collection tank into a 450 gallon holding tank. I fill that tank 5 gallons at a time. New pump worked great, pumps about 3 times faster than the old one. We also have a 100 gallon stainless tank in the barn that we use to gravity feed the evaporator.

    This is the most diffucult area to collect sap. Up a hill in the woods. There's about 60 or 70 taps in here. Took me over 2 hours just in here today.

    I hope to soon add a 55 gallon drum with a hose attached to it, in the middle of this area. Will run a pump off a small generator. Essentially the tank will act as a big funnel and will move sap to the truck from the middle of the woods, this will save a lot of walking and hauling up and down the hill. And a lot of time.

    This is the storage tank inside the barn, I made some nice mortice and tennon brackets to hold it up and bolted it through the posts of the barn. It holds 100 gallon so about 800 lbs just fine.
    The copper pipe coming off the bottom feeds through the wall into the evaporator. There's a valve in the sugar room to control the flow depending on how fast it's cooking off. Usually a pretty good flow. We try to maintain about an inch of sap in the pans, the valve allows is to tweak it as needed. Sap is pumped up to that tank from the holding tank outside.
